Chocolate Stuffed Blondies | Gluten Free Recipe

It's been
long since I've been in the kitchen…
I love
baking and I've always have. However, it's been almost six months since I
shared a recipe on the blog. Not that I haven't baked, but when I did I didn't take
the pictures for the blogspost. I had a day off the other day and decided to
bake something. I don't know why but I was craving blondies like crazy;
searching on the Internet I found some amazing recipes and I decided to combine
them to create my own one.
This
blondies are amazing; they turned out a bit more chocolaty that I was expecting
but they still taste really good. If you want them to be a bit lighter (in
colour and chocolatiness) use a smaller mold (one that’s square will work
perfectly) or simply add les chocolate chunks. I also had a bit of a problem
with the mold I use, that's why they look so slim. Anyway, I have written the
recipe down bellow so you can recreate them at home. Enjoy!!
INGREDIENTS
128g (1 cup)
of gluten free flour
220g (1 cup)
of packed brown sugar
112g (1/2
cup) of butter, at room temperature
1 egg
1/2 tsp of
baking soda
1/2 tsp of
salt
A handful oh
chocolate chips (or chunks)
Nuts
(If you have
problems finding gluten free chocolate chips, chopped a regular chocolate bar
and you'll get the same effect).
STEP BY STEP
Preheat your
oven at 175cº and grease your baking dish so it's ready for later
Mix the
butter and brown sugar together (it works better with an electric whisker)
until you get a fluffy mixture. Then add in the egg and salt and beat for one
more minute. Turn the mixer speed low and add the flour carefully. Once all the
flour is in, add the baking soda.
When you
have all of your ingredients mixed together, add the chocolate chips and mix it
with a spatula. Add a few nuts as well to get the perfect "brownie" consistency.
Place your
mixture in the baking dish and smooth the top with a spatula. Add a few nuts on
top if you want. Bake for 25-30 minutes or until the top is golden. Once it's
done remove from the oven and leave it cool for 20 minutes before cutting it
into little squares (this recipe makes 9-12 portions).
